Chicken Continental
*Note: This recipe does not contain: Gluten, milk, soy, egg, corn, nuts.
- 1 pound raw chicken, cut into stips
- 1 can (4 ounces) mushrooms, drained
- 1 garlic clove, crushed
- 2 tablespoons olive oil
- 2 cups organic chicken broth
- 1 package (9 ounces) frozen French-style green beans, defrosted
- 1 teaspoon salt
- 1/2 teaspoon tarragon
- 1 teaspoon pepper
- 1 3/4 cups quick-cooking rice, cooked brown rice, basmati, or wild rice

Saute chicken, mushrooms, and garlic in oil until chicken is light brown. Add broth, beans, salt, terragon, and pepper. Bring to a boil. Stir in rice. Remove from heat. Cover and let sit for 5 minutes before serving.
Jonathan’s Falafel (vegetarian)

- 2 pounds dry garbanzo beans
- 1 bunch parsley, finely chopped
- 1 medium potato
- 1 medium onion
- Garlic salt to taste
- 1/8 teaspoon baking soda
- 1/4 teaspoon salt
- 3 cups canola or vegetable oil for deep-frying
Soak garbanzo beans in water for two days; drain and change water several times throughout. Clean the parsley and potato and peel onion. Rough chop all three and place in a food processor. Add the beans to the processor and grind until fine and homogeneous in color. Add garlic salt if desired. Divide the mixture into serving sizes (approximately 1 cup portions) and freeze for later use. To cook, thaw the mixture, add to each 1 cup batch: 1/8 teaspoon baking soda and 1/4 teaspoon salt and mix well. Form into bite-size balls. Heat oil to 375 degrees, and deep-fry balls in hot canola oil until they turn golden. They are best served immediately after deep-frying.
(Yield: 12 bite-size balls per cup)
Peanut Butter Truffle Cookies
*Note: This recipe does not contain: gluten, milk, soy, or corn.
- 1 cup creamy GFCF peanut butter (Be sure to read the label, some brands contain soy.)
- 1 cup light brown sugar
- 1 large egg
- 1 teaspoon baking soda
- 1/2 cup GFCF semisweet chocolate chips
